This region produces Trinitario cocoa beans, grown in a tropical climate influenced by the scorching sun and the ocean.The cocoa beans have a delicate aroma with a rich cocoa flavor, undergoing a meticulous fermentation process. They are fermented in wooden boxes covered with leaves for 5 to 6 days, turned daily. The drying process involves sun-drying the beans for 5 days, 3 hours each day, followed by high-temperature roasting to bring out flavors reminiscent of hazelnuts, macadamia nuts, and other nutty notes.
