The cocoa beans originate from the Piura and Ayabaca provinces on the desert coast of northern Peru, processed by the Cooperativa Agraria Norandino, a cooperative consisting of hundreds of small-scale farmers. Specifically sourced from regions including Las Lomas, Tambogrande, Montero, Paimas, and Suyo. These cocoa beans are harvested at altitudes ranging from approximately 50 meters to 400 meters. Genetically, they are a blend of local native varieties, often containing around 30% white cocoa beans.
The aroma intriguingly combines notes of persimmon and apricot, resulting in a juicy and vibrant profile. It boasts a modest sweetness and a bright, refreshing acidity akin to lime zest, harmoniously paired with a tannic bitterness reminiscent of persimmon fruit. Its lively and energetic character prevents excessive sweetness, even with the added hint of lime, which prevents it from becoming overly cloying. There's a subtle yet distinct undertone of mild nuts, contributing to a well-rounded flavour.
